This recipe makes six pancakes. (You can easily double the recipe to make a bigger batch.)
Ingredients:
1 1/2 cups all purpose flour
1 1/2 tablespoons baking powder
3 tablespoons granulated sugar
1/8 teaspoon salt
1 1/2 cups cold water
3 tablespoons vegetable oil
1 teaspoon vanilla extract
Optional Additions:
1/2 cup chocolate chips
1/2 cup fruit
1/2 cup pumpkin puree
1 teaspoon cinnamon
Instructions:
- Add all the dry ingredients to a large mixing bowl, and whisk together to remove any clumps
- Add wet ingredients to the dry ingredients
- Whisk until smooth, but just combined (don’t overmix)
- Ladle about 3/4 cup batter onto greased griddle or pan on low to medium heat
- Cook until bubbles rise to the surface, about three minutes, then flip and cook for another three minutes
That’s it! Top with butter and syrup if you wish.
