The Best (Easy) Vegan Pancakes

This recipe makes six pancakes. (You can easily double the recipe to make a bigger batch.)

Ingredients:

1 1/2 cups all purpose flour

1 1/2 tablespoons baking powder

3 tablespoons granulated sugar

1/8 teaspoon salt

1 1/2 cups cold water

3 tablespoons vegetable oil

1 teaspoon vanilla extract

Optional Additions:

1/2 cup chocolate chips

1/2 cup fruit

1/2 cup pumpkin puree

1 teaspoon cinnamon

Instructions:

  1. Add all the dry ingredients to a large mixing bowl, and whisk together to remove any clumps
  2. Add wet ingredients to the dry ingredients
  3. Whisk until smooth, but just combined (don’t overmix)
  4. Ladle about 3/4 cup batter onto greased griddle or pan on low to medium heat
  5. Cook until bubbles rise to the surface, about three minutes, then flip and cook for another three minutes

That’s it! Top with butter and syrup if you wish.
