If baking a vegan cake from scratch seems like way too much work, you’ll be happy to know that all Duncan Hines cake mix and frostings are vegan! Hold on… A quick disclaimer that you must check the ingredients just to be sure, considering ingredients vary in different locations. Luckily, in my location in the US, all Duncan Hines cake mix and frosting are vegan, including the cream cheese frosting. (I checked!) The cake mix itself is mainly just flour and sugar, and the frosting is basically just shortening and sugar.
So, how do you make a professional-looking vegan Duncan Hines cake? Let’s get into it…
For a two-layer cake, you will need:
2 boxes Duncan Hines cake mix
1 cup pumpkin puree (or applesauce)
1 cup cold water
2 containers Duncan Hines Frosting
That’s it… You mix the cake mix with the water and pumpkin puree (or applesauce), then follow the exact instructions on the Duncan Hines box. I’ve used both pumpkin puree and applesauce, and you can’t taste either in the cake, however, I do prefer pumpkin puree because it is still more subtle, and the applesauce makes a moister cake.
As always, for a smaller recipe, you most certainly can cut this recipe in half.
For the cake in the picture above, I made a gingerbread cake with the Duncan Hines spice cake mix and Duncan Hines buttercream frosting with pumpkin spice and cinnamon. It’s the perfect cake for Thanksgiving and/or Christmas.
