Vegan Latkes with Tofu Sour Cream

I wanted to get this recipe out before Hanukkah started because not to brag, but I make the best latkes, and they’re vegan, so bonus points! I’m all about making recipes easy too, so you might find this to be the easiest latke recipe you’ve ever done.

This recipe makes 8 latkes.

Latke Ingredients:

5 small to medium peeled russet potatoes

1 small peeled yellow onion

1 teaspoon salt

1/4 teaspoon ground black pepper

2 tablespoons matzo meal (I blend matzo crackers)

1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons warm water, let sit for at least five minutes)

Instructions:

  1. Cut peeled potatoes into cubes and pulse in a blender until the texture resembles grated potatoes
  2. Over the sink, squeeze a handful of the blended potato at a time, removing as much liquid as possible, then transfer to a large bowl
  3. Cut the peeled onion into cubes and pulse in the blender, same as potatoes
  4. Add the blended onion to the large bowl with blended potatoes
  5. Add the rest of the ingredients to the bowl, and mix with your hand/s until everything is incorporated
  6. Add about an inch of vegetable oil to a large saucepan, and heat over medium heat
  7. When the oil is ready, shape a latke into an inch thick circle with your hands, then carefully let the latke slide off your hand into the oil (this might take some practice)
  8. Fry 3 to 4 latkes at a time, depending on the size of your pan
  9. Cook the latkes until golden brown, about two to three minutes, then flip with a long spatula and fork (for support) and cook until golden brown, another two to three minutes
  10. Transfer the latkes to a plate lined with napkins and cool for a few minutes before eating

Tofu Sour Cream Ingredients (makes about one cup of sour cream):

6 oz. extra firm tofu

1 tablespoon lemon juice

1/2 tablespoon apple cider vinegar

pinch of salt

2 tablespoons cold water

Instructions:

  1. Dump all the ingredients into a blender, and blend until smooth
  2. Store in fridge

Note: This may not taste exactly like sour cream alone, but paired with the latkes, it comes pretty close!
