Banana Chocolate Chip Muffins ❘ Simple & Vegan

This recipe makes nine muffins, and a few ingredients are interchangable to make this recipe even easier.


2 ripe bananas (any size)

1 teaspoon vanilla extract

1 teaspoon apple cider vinegar (or lemon juice)

1/2 cup avocado oil (or other flavorless oils like vegetable or canola)

1/4 cup pure maple syrup (or white sugar)

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

1 1/2 cups all purpose flour

1/4 cup chocolate chips (you can add more to your liking)


  1. Preheat oven to 350*F
  2. Line baking cups in a cupcake pan or baking pan
  3. In a large bowl, squish the bananas with a fork (or mixer) until there are no clumps, or very minimal
  4. Add the vanilla, vinegar, oil, syrup and cinnamon to the bananas, and mix until fully combined
  5. Add the flour, salt, baking powder and baking soda, and mix until fully combined (don’t overmix)
  6. Add the chocolate chips, and fold them into the batter
  7. Put about 1/3 cup of the batter into the baking cups
  8. Bake for thirty minutes at 350*F
  9. Let cool for at least five minutes
